Chianti has a distinct bouquet and a smooth, harmonious taste, both dry and fresh, making it especially well suited to accompany meals of roasted game, shish kabob and grilled meat, as well as aged cheeses.

The grapes used to produce it: 90% Sangiovese, 10% Canaiolo Nero. The wine is best served at a temperature of roughly 18° C. and the bottle should be uncorked at least an hour in advance.

Identity. A virtue found in the etymology of an ancient word: idem, or being the same. Cuvée Prestige, the essence of Franciacorta, Ca’ del Bosco style. A jewel created in 2007 from thirty year’s experience. Only the finest Chardonnay (75%), Pinot Nero (15%) and Pinot Bianco (10%) grapes from 134 vineyards, vinified separately and skillfully blended with reserves of the finest vintages (at least 20%) go into the magical rite of Cuvée creation. It will take 28 months of refinement on yeasts before this wine is ready to express all its richness and identity. A classic, well-balanced Franciacorta, pleasantly fresh and crisp. Perfect for any occasion.

96 Chardonnay vineyards planted an average of 27 years ago located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca, Iseo and Passirano. 3 Pinot Bianco vineyards planted an average of 21 years ago located in the municipality of Passirano. 17 Pinot Nero vineyards planted an average of 19 years ago located in the municipalities of Erbusco, Provaglio d’Iseo and Passirano.

HARVEST PERIOD
First and second ten days of August.

AVERAGE YIELD PER HECTARE
7,500 kilograms of grapes, equivalent to 4,730 litres of wine (must-to-fruit ratio 63%).

VINIFICATION
The base wines for Cuvée Prestige are obtained in compliance with a rigorous winemaking protocol. The hand-picked grapes are coded by vineyard, chilled in a cold room and selected by experienced cellar staff before whole-bunch pressing. Alcoholic fermentation is in temperature-controlled steel tanks, where the wines remain until the following March. Seven more months of ageing are necessary for the wine to clarify, mature and disclose the character of its vineyard of provenance. Subsequently, the wines are carefully blended with reserve wines from the best vintages (from 20% to 30%) in the magic ritual of making the cuvée. It is this special technique that imbues Cuvée Prestige with its distinctive character. The essence of Franciacorta made the Ca’ del Bosco way. Only after a maturation period that averages 25 months will this Franciacorta be ready to express all the sumptuous depth of its personality. Disgorgement takes place in the absence of oxygen using a unique system designed and patented by Ca’ del Bosco. The procedure avoids oxidative stress or the need for additional sulphites, making Ca’ del Bosco Franciacortas purer, more appealing and longer lived. Finally, every bottle is given an individual marking to ensure its traceability.

Nero D’Avola – Baglio del Sole – SICILY – EXCLUSIVE

Nero d Avola Baglio del Sole

The world has now discovered Nero d’Avola, Sicily’s most important, even if not the easiest of grape varieties. Rare in its kind, this pure Nero d’Avola owes its existence to a careful selection of grapes with the aim to produce a high quality and affordable wine, yet exclusively characterised by the qualities of this native grape variety.

Dark ruby red. Generous aromas characteristic of this variety, reminiscent of red plums and with notes of Mediterranean scrub, intersected with very pleasant shades of black pepper. A wine that impresses with the integrity of the fruit, fleshy, rich, consistent with the typical characteristics of the variety.

Grillo – CAROLINA MARENGO – KISA – Feudi del Pisciotto

GRILLO Carolina Marengo

Grillo is perhaps Sicily’s lesser known grape variety, although it is certainly not inferior to other white grape varieties. Label drawn by Carolina Marengo.

A straw-yellow wine characterised by rich apple and pear notes, which render it instantly recognisable and appreciated. The taste is warm and dry, slightly tannic and displaying a citric aroma.
